Neil Perry sings praises of ‘hell-bent’ government as new restaurant finally opens
Neil Perry’s new restaurant Margaret has had a rocky start on its long-awaited grand opening, but the chef has guaranteed the wrinkles have been smoothed over.
A problem with the dockets left the kitchen “absolutely smashed” Mr Perry explained, “but we think we’ve learned what we need to do to get it to work”.
He told Deborah Knight trade will truly be roaring when the two sqm rule returns, and the weather is more conducive to outdoor dining.
“If we’ve been through this incredible pandemic and we don’t end up with a better city on the other side, then it’s a lost opportunity.
“I think the government’s hell-bent on seizing that opportunity, which is fantastic.”
