This week Sarah cooks Sweet Potato Salad
Ingredients –
Baby spinach leaves
Pinenuts
Cherry tomatoes
Bocconcinni balls
Avocado
Sweet potato (roasted)
Honey mustard dressing (see below)
Method –
Roast sweet potato in oven and allow to cool. Combine salad ingredients in bowl and pour over dressing.
Honey mustard salad dressing –
1/4 olive oil
cup 2 cloves garlic (crushed) 1 tablespoon honey
Juice of 1 lemon
I teaspoon seeded mustard
