This week Sarah cooks Potato Salad.
Ingredients
10-12 small jacket potatoes
8 bacon rashes (cut into small squares)
3 shallots (finely sliced)
1/2 cup pinenuts
3/4 cup mayonnaise
3/4 cup sour cream
Method
Fry bacon in pan. Remove from pan and cool.
Boil potatoes in saucepan of water until soft when pierced with a fork.
Remove potatoes from water and allow to cool.
Combine potatoes, shallots, bacon and pinenuts in a bowl.
Place equal parts mayonnaise and sour cream in separate bowl and stir to combine. Stir cream mixture through the potatoes.
