This week Sarah cooks up Cold Chicken Curry
1 BBQ or roast chicken (shredded)
2 brown onions (finely diced)
2 tablespoon curry powder
1 tablespoon apricot jam
1/2 cup tomato sauce
1 tablespoon hot mango chutney
1 tablespoon sweet mango chutney
1/2 cup mayonnaise
1/2 cup cream
Fry onions until translucent. Add curry powder and cook further for 1 minute (stir while cooking to avoid it burning). Remove onions from heat and stir in tomato sauce, apricot jam and both chutneys. Allow to cool in fridge. Beat cream until thickened. Add cream, mayonnaise and shredded chicken to the onion mixture. Stir to combine.
