Luke Grant is joined by Sarah Boorer, Communications professional & CWA award-winning cook, to look at the world of baked goods, delicious treats and & easy recipes.
This week Sarah whips up Crusty Chicken Casserole (AKA Sarah’s grandma’s Chicken Pie).
Ingredients
1 large onion chopped
½ cup chopped celery
3 tablespoon chopped shallots
3 bacon rashers chopped
2 tablespoon butter
1 ½ cups sliced mushrooms
1 x 445 gm cream of chicken soup
1 cup sour cream
1 cooked chicken

Method
- Fry onion, celery, shallots, bacon & butter – remove from pan
- Add mushrooms to pan & fry
- Mix soup, sour cream, chicken & cooked vegetables
- Place in a greased casserole
- Top with cheese batter (below) and bake at 350f (180c) for 40 minutes
Cheese batter
Sift 1 cup of self-raising flour, salt & pepper
Add 4 tablespoons of chopped capsicum, 2 eggs, ½ cup of milk & 1 cup of grated cheese
