Woolworths is introducing a new onion variety called ‘Happy Chop,’ which is designed to be less likely to induce tears when cutting into it.

Professor Steve Swaine from CSIRO explained that this new variety was created through crossbreeding, selecting offspring with reduced compounds that cause crying.

It is uncertain whether it would impact the onion flavour.

Professor Swaine also discussed the advancements in crop breeding that have led to improved flavour, texture, and resilience to pests and environmental conditions.
